homemade chocolate syrup

many store-bought chocolate syrup and cocoa drink mixes contain high-fructose corn syrup and dyes, and some aren't even made out of real chocolate. i had been hoping for an easy chocolate syrup for months (by hoping for, i mean i'd been really wanting one but hadn't actually looked for one), but one day, it just sort of fell in my lap! my mom emailed this recipe to me, and it is so delicious -- it tastes just like what you would buy at the store. in my head, i made gallons of this and poured it all into prettily decorated glass jars and gave them to our friends for christmas. in my head. maybe next year i'll be a little more organized and it will happen.

3/4 cup cocoa powder
1 cup water
2 cups sugar
1/8 teaspoon salt
1/4 teaspoon vanilla

mix the cocoa powder and the water in a saucepan. heat and stir to dissolve the cocoa. add the sugar, and stir to dissolve. boil for 3 minutes over medium heat. be careful not to let it get too hot and boil over! add the salt and the vanilla. let cool. pour into a clean glass jar, and store in the refrigerator. keeps for several months, [but trust me it will be gone before then]. yields two cups.
